Action-packed Brownies

You may not agree with us that these are actually brownies. But stick with us, they are really delicious! And if you are watching your sugar intake, or like snacks with some protein, but still want that little something sweet, give these a try. They are not too 'adult' for the kids to enjoy-- and you can sneak in some healthy veg too! There's no sugar (only a bit of honey) but you don't notice that with all the other great flavours going on.

You'll need:

coconut oil (or butter) for greasing

4 medium carrots, grated

225g ground almonds

1 egg

1 tsp good quality vanilla

4 tbsp runny honey

1 tsp ground cinnamon

freshly grated nutmeg (about 1/4 tsp)

1 tsp bicarbonate of soda

100g dark cooking chocolate (Montezuma or Green and Blacks is good)

60g desiccated coconut

100g chopped almonds and pecans 

Method:

Preheat the oven to 180°C, and grease a 23cm-square tin using coconut oil (or butter). Melt the chocolate in the microwave for 30 seconds or so-- stand there and watch, as it burns easily! It's ok if there are still a few unmelted lumps. Add the rest of the ingredients and give it a good stir. Pour the mixture into the prepared tin and bake for half an hour or until set. If you can wait, let it cool in the tin and cut into small squares. So easy and delicious!
