GINGERBREAD …. For cookies, decorations or an all out Christmas Gingerbread House!

Ingredients

Makes 15 - 25 biscuits or decorations

MethodPreheat the oven to 180 C / Gas 4.

1. Put the flour, butter, ginger, cinnamon and bicarbonate of soda in a mixing bowl. Mix it all together with fingertips until crumbly. Add the sugar, syrup and egg and mix until it forms a firm pastry mix.

2. Using a rolling pin, roll out the pastry to about 5mm thick. Make sure the surface and the rolling pin are well dusted with flour. Use gingerbread men cutters or Christmas star cutters to cut out shapes.  (If hanging as decorations, make a small hole in the dough with a skewer, to be able to hang with ribbon once cooled.)

3. Place the cut out pastry on a greased or non-stick baking tray and chill in the fridge for 20 minutes (this stops them from spreading too much whilst baking.)

4. Bake in the preheated oven until golden, about 15 minutes. (check after 10 minutes.) Gingerbread may be ready after 12 minutes in a fan assisted oven.

5. Leave to cool completely and then decorate with icing and sweets as required.

To make a gingerbread house, find a template online. Once you’ve rolled out your dough cut according to the template and continue from step 3.  Use royal icing for decoration and for ‘glueing’ the pieces together to form the house structure. Decorate with more icing and jelly sweets.  Enjoy!
