Recipe - Mint Aero Cheesecake

Gilead Foundations

This cheesecake was trialled by Gilead Foundations and was a huge success - they encourage everyone to give it a go!

Prep time – 25 mins

Setting time – 6+ hours

Method

For the base

1 Break the digestives (with the cocoa powder if using) until they form a fine crumb

2 Mix the melted butter into the biscuits and press down into the bottom of a deep springform tin and place into the fridge whilst you create the filling.

For the cheesecake

1 Using a mixer, combine the mascarpone, icing sugar, and peppermint extract until smooth. 

2 Add the double cream and whisk the two mixes together, towards the end add in the green food colouring until it turns into a pale green colour. Whisk until it forms solid peaks.

3 When whisked – fold through the chopped up Mint Aero pieces and spread on top of the biscuit base. Refrigerate for more than 6 hours hours to set.

For the decoration

1 Once it has set, remove from the tin. Whip together the double cream and icing sugar until thick.

2 Drizzle over some melted chocolate, pipe on some the whipped cream, and add on even more Mint Aero!
