THE NEW INN - Creme Brule

Ingredients

For 4 portions

1pt Double Cream

4 egg Yolks

5oz Caster Sugar

Almond Biscuits ( Sainsburys or Waitrose)

Caster Sugar To Sprinkle

4 Medium Size Ramekins

Method

  1. In a Metal Bowl that will fit into a Saucepan without touching the bottom place the 4 egg yolks and caster sugar
  2. In the saucepan put enough water to a level just under the metal bowl and bring to the boil and turn to simmer
  3. In a seperate saucepan bring the cream to the boil while at the same time in the metal bowl which is in the saucepan whisk the egg yolks and sugar until thick and creamy becareful not to overcook, then add the hot cream and gently whisk until thick and creamy, pour into the ramekins and leave to chill preferably overnight.
  4. Sprinkle the top of the Creme with Caster Sugar either using a blow torch or a pre-heated hot grill caramelise the sugar.
  5. Let the Sugar set and serve with Almond Biscuits
